Chopped Salad

My husband and I went to an amazing restaurant in downtown Seattle and has a delicious chopped salad. That salad is my inspiration for this recipe. This chopped salad is the perfect blend of sweet and savory. This recipe is customizable. You can mix or switch any ingredients you want to  make it your own. It will still be delicious even if you omit a few ingredients. I hope you take a moment to create your own version of this salad. It is the perfect balance of crisp, sweet, savory, and delightful. Chopped Salad

Ingredients:

  • Romaine lettuce 
  • Cherry tomatoes
  • Green peas
  • Green olives
  • Feta cheese crumbles
  • Salami 
  • Salt and pepper to taste 
Chop all ingredients to size of choice. Steam the green peas. Then place all ingredients in large bowl and toss together. Make the vinaigrette and drizzle on and/or toss into the chopped salad and enjoy. 


Vinaigrette

  • Tbsp.  Extra Virgin Olive Oil
  • Tbsp. White distilled vinegar 
  • Salt and pepper
  • Parmesan to taste

Shake together equal parts of oil and vinegar then add salt and pepper and Parmesan to taste. Shake well until emulsified and drizzle onto the salad or toss in.
