Banana Nut Bread, Muffins, and Pancakes
Do you have some bananas starting to turn too bad for eating? Don't toss them out turn them into a delicious treat your friends and family will love...banana nut bread. Banana nut bread or muffins are really delicious but have you every tried banana nut bread pancakes? They are scrumptious too. Just whip up banana nut bread toss in some chopped dark chocolate bits and cook like a pancake. Top with syrup and or whip cream and you have a delicious treat that is sure to please. Yields: 1 loaf
Ingredients:
Preheat oven 350 degrees if baking bread
Preheat skillet if using cast iron or griddle
In a bowl, whisk all the dry ingredients: all-purpose or bread flour, and whole grain pastry flour, baking powder, baking soda, salt, and nutmeg together and set aside. In a separate bowl, mash the bananas with a fork then add the brown sugar, melted butter or oil, milk, and eggs. Then add the dry ingredients to the banana mixture and stir together. After it is mixed, if desired add the walnuts and/or chocolate chunks.
For pancakes: use a preheated griddle or skillet and cook and serve like any other pancake.
For bread: pour batter into greased loaf pan and bake at 350 degrees for 55-60 minutes. Cooking time may vary. test with tooth pick if unsure.
Toppings for pancakes could include whip cream, syrup, nuts, sliced bananas, chocolate chips, or sprinkle on some powdered sugar
